A Little Taste of Home

I’ve always loved gumbo, but I had little time for cooking until I left home at 22 and began yearning for the comforts of home.

You just can't take the country out of the girl—she'll always return to the food that soothes her soul. That food is gumbo, a West African dish ("ki ngombo"), meaning "okra."

When West Africans were taken to the Americas during slavery, they brought okra pods and planted their seeds. And that is how the traditional gumbo dish was introduced to the Americas.

Far From Home

After 20 years in the military, including time spent in the combat zones of Iraq and Afghanistan, I needed the comforts of home cooking more than ever before.

I don't regret my time in the military. Still, any vet will tell you it's a difficult transition from military to civilian life. There's no better way to ease the change than by lifting each other up through food.

The medley of flavors in a Southwest Louisiana gumbo is the perfect metaphor for the diversity of the American South. It's hard to find a Southern dish that is more celebrated.

What Makes a Good Gumbo?

It's all about the roux—the flour and fat browned to a lovely, rich, chocolatey finish. "Don't burn your roux," I hear my mother saying.

Gumbo can vary as much as the cooks making it, but nothing beats a hearty sausage and chicken gumbo with meats from my Iowa, Southwest Louisiana hometown.

How a gumbo can connect a community is just as important as the ingredients. Cooking gumbo is joyful, but serving gumbo and having real conversations is bliss.
